Pescavore Tuna-Nori Rolls with Spicy Peanut Sauce

Make sushi at home with simple hand-rolled sushi called Temaki Sushi. Everyone in the family (or at the party) will have fun rolling the nori sheets around sushi rice and their favorite fillings!

Ingredients

1 package nori sheets, cut in half in the diagonal

1 package Pescavore tuna strips or tidbits

3-4 cups steamed short grain or jasmine rice

2 small cucumbers, sliced in eighths

1 bunch scallions, sliced

1 package microgreens for garnish, optional

 

Peanut sauce:

1/4 cup rice wine vinegar

2 tablespoons sesame oil

1 tablespoon Sichuan-style chili crisp, plus more for serving

1 tablespoon granulated sugar

1 tablespoon soy sauce

1 inch fresh ginger, finely grated (about 1 scant tablespoon)

⅓ cup smooth peanut butter, room temperature

Kosher salt and freshly ground black pepper, to taste

Directions

To prepare the sauce, whisk together all ingredients except peanut butter, salt and pepper. Whisk well and let sit until sugar has dissolved into liquid. Then add peanut butter and stir well. Taste and then season with salt and pepper, if needed.

To prepare nori rolls:

Place one nori triangle with the long side away from you on a clean and dry cutting board. Starting with one corner, fold inward toward the center of the long side, making on side of the cone. Fold in the middle of the long side while you do the same with the other corner. You are creating the cone shape that will eventually be filled with the ingredients.

Put 2-3 tbsp rice in the cone, top with tuna, cucumber and 2-3 pieces of scallion.

Add 1-2 tsp peanut sauce on top and garnish with micro-greens if using.

Continue with the other nori sheets.
