Sauce Ingredients
1/4 cup balsamic vinegar
1/4 cup Dijon mustard
1/4 cup raw Manuka honey
1/4 cup extra virgin olive oil
1/4 teaspoon dried rosemary
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes ~ optional if you like it a little spicy
Pasta Salad Ingredients
8 ounces dried pasta such as rotini
3 ounces (2 packages) Pescavore Smokey Poke Tuna Jerky chopped
1 cup cherry tomatoes halved
1/2 cup Castelvetrano Olives pitted and sliced
1/4 cup shallots sliced ~ optional
8 basil leaves chiffonnade (ribbon cut) or torn plus extra to garnish ~ optional
1/4 cup cubed Provolone
1/4 cup Mozzarella balls (Ciliegine) or sliced small pieces
1/2 cup artichoke hearts sliced
Directions
Make the dressing and set aside in refrigerator. Cook pasta according to package directions then drain and toss with a little olive oil and set aside to cool. While pasta is cooking then cooling prep all ingredients. In a large bowl place cooled pasta, tuna, tomatoes, olives, shallots, basil, cheeses and artichoke hearts. Toss all together with about 1/4 cup of dressing and season to taste with salt and pepper. Chill for about an hour before serving and if desired, garnish with fresh basil leaves and serve with extra dressing on the side as needed. Extra dressing can be stored in an airtight container up to 1 week. Enjoy!
